01 / ABOUT THE PLACE

About this place

A petite baguette generously filled with milky cream, the Milk France is the bread that tempts almost everyone who steps into Think. Built on Corman cultured butter whipped together with cane sugar from the Amami Islands and condensed milk, the cream delivers deep richness without sitting heavily on the palate. The bread itself has a clean bite and tender, moist crumb that melds effortlessly with the silky filling, leaving a rustic yet luxurious finish.

Anyone who wants to appreciate the flavor of the dough itself will want to look toward the bakery's high-hydration rustic loaves. Made with an 115% hydration rate, the classic baguette pairs a thin, crisp crust with a moist, springy crumb that releases the flour's natural sweetness as you chew. The Baguette Olive incorporates juicy green olives for a gentle, savory salinity that pairs well with wine and meals, while sweeter options include the Campagne Sangria, studded with blueberries and semi-dried figs simmered in red wine.

The shelves of viennoiserie and baked treats reflect the same meticulous craftsmanship. Croissants rich with the aroma of cultured and browned butter, alongside flaky pain au chocolat with delicate layers and deep cacao notes, make wonderful choices for a light snack or tea. They are best picked up alongside a pour-over coffee, served strictly black, to enjoy on the go.

The shop is located on the 1st floor of Ueno Sakuragi Atari, a revitalized traditional Japanese house complex in Taito Ward's Ueno Sakuragi neighborhood. It operates strictly as a takeout bakery without dine-in seating. Payments can be made with credit cards and various mobile payment methods, including PayPay.
